I DID IT!

Hola! Is anyone else ready for the weekend?! I am. I know I just got back from Florida, but I am so not ready for “work mode” yet, UGH. I am still in Florida mode and work is NOT in my FL schedule 😉 Monday I got home at 2ish and worked until 4 and came home and hung out with Jason and Twix. Yesterday I worked until 4 and studied throughout the day for my Staff Sergeant Board. No news to tell of Monday and Tuesday really. Except for the fact that I was so ready to get back into somewhat of a routine. One week away from home and I was thrown out of my “norm” -freely and loving it, of course. So Tuesday morning I woke up and made my yummy mix of oatmeal plus an individual size Benefiber (tasteless!) and an icy coffee!


I was CRAVING this meal! I tried to duplicate it once in FL, but *sigh*, no Bees Knees or Almond milk in sight. Bummer. There is a woman at work who is retiring and the Maintenance Squadron held a Pot Luck for her with all kinds of YUMMY food! I was a good girl and, knowing how much I splurged (and loved every minute!) in FL, I decided to nab some carrots, celery, broccoli, and cauliflower with about a TBLS of low-cal ranch for dipping. For the main course I had a heaping bowl of HOTTTT chili with some oyster crackers and I shared a home-made oatmeal chocolate chip bar with Jason – sooo goooood! 🙂 (by share I mean I gave Jason UNO bitO)

I hit a PR yesterday!!! I ran 6(.3) MILES in 60:06!!! I was not too concerned with timing. I was more focused on hitting that 6 mile mark and I DID IT!!!! I wanted to see how I felt and if I could even run, a 10K (on the treadmill). This is officially the farthest I have EVER run! I have used a treadmill for all of my runs thus far, however, I do intend to hit the open road a few times here soon. Also, my fiance’ told me today that they hold 5K and 10K (ETC) races in Afghanistan!! So I am looking forward to getting my run on in the desert. 🙂 Stay tuned in April-July time frame for updates!

I have really been wanting to try TOFU so last night Jason agreed to try it with me. Jason cooked dinner while I studied. He did such a great job with the tofu. He seasoned it with a Blazin’ Cajun Rub we got at a festival over the summer, A1 sauce, Worcestershire, Lowery’s, Garlic Salt, and S&P. Then he cooked the tofu in extra virgin olive oil. The outside of the tofu was crispy and the inside was tender and smooshey. It had a weird texture in the middle like…a….a soggy french toast! But the flavor was delish so I got over the texture fast. On the side was a California Medley of broccoli, carrots, zucchini, squash, and cauliflower (seasoned) and some chicken broccoli rice. Turned out FAB!

I give TOFU two thumbs up! I will definitely eat this again.

On to TODAY: WEDNESDAY

Jason and I had to be AT WORK at 3:30 A.M. I woke up at 2 (WOAH BABY!) and had my usual oatmeal and I had a cup of hot coffeeJOE because it was FREEZING up in this mother! Brrrr! I worked all morning and studied in between because my BOARD was today!!! I am pleased to announce that I GOT PROMOTED!! :):) You can now refer to me as “Staff Sergeant Kolesar” – EEEKK!! I have waited 4 years to get out of the “Airman” range. I DID IT!!! I was super nervous all month about this promotion. I mean, I know I deserve it and I work my buns off, so the evidence is all there. I just hate interviews and being in a room with (3) superiors with lots of questions about ME and MY opinion. Talk about some anxiety building up -PHEW! But, I made it through and surprised myself! I hate when I have self-doubt about things that I know I am damn well capable of doing – Grrr, it’s frustrating. I chalk it up to a fear of FAILURE. Then I suck it up and do what I know I can do and kick that fear to the curb!! 🙂 Movin’ on up! Woop Woop!

Now it’s time for din din and a celebratory cocktail (or 2 ;)). Here is a sneak peek at dinner:

Jason made porkchops dipped in egg (scrambled) and Italian bread crumbs and fried in 1.5 TBLSP EVOO (extra virgin olive oil) and a green bean casserole with 2 cans green beans, 1 can cream of mushroom soup (low sodium), and crumbled saltines on top and baked! Looks good! I am so glad Jason can cook 🙂 Top this meal off with some vodka OJ (screwdriver) and it’s a wrap!

Homeward Bound….I think.

Happy Superbowl Sunday!! Are you watching the game or are you like me and only paying attention to the commercials? 🙂 Yeah, I do not follow football. I have tried to understand the sport a few times, but I just cannot get into it enough to pay attention for very long. My fiance’ and most of my guy friends love it. I do not mind watching football with him or friends as long as there is good food and booze present as well. Otherwise, count me out. Oh by the way, I am still in Florida. We were supposed to go home on Friday but Illinois got some bad weather and we were told that we weren’t coming home until tomorrow! So, we have just been kicking it and wasting time. I don’t mind though. I am glad that we are (hopefully) going to be home tomorrow because I have things I would like to get accomplished (at work and at home) and I miss my Boo and my cat. Living out of a suitcase is just not my thing. So I met some co-workers down at the hotel bar and it was bumpin’ with football fans (and commercial watchers!!) We ordered some grub and I came back to my room so I do not get sucked into the vortex that IS Superbowl Sunday. I need to pack and relax before we peace out tomorrow morning – EARLY! I have been slacking the past couple days on blogging, so let me catch you up on what’s been happenin’! 🙂

Friday we made a trip to the Wal-Mart – yes, we were that BORED. We also went to Mexican restaurant in Destin and it was yummy! I ordered chips and salsa and a side of white cheese and a chicken fajita with all the fixins’.

I think the rest of Friday I just hungout around the hotel. All my days are beginning to run together! Bah, don’t you just hate when that happens?! This is why blogging everyday is ideal, because if you wait too long it is hard to decipher what you did on what days! Anyway, I made a friend while I was here! Her name is Danielle and she is a bartender at the hotel lounge. She took me out on the town and we had a blast! I had quite a few cocktails and made one too many drunk dials to the Booski – oops! Also, I devoured a few slices of pizza in the early hours of the A.M.. Danielle was a good wing(wo)man though. She kept me at her side and made sure I made it home safely. 🙂 And HOLY HANGOVER yesterday!! Oh goodness! I felt AWFUL. Ugh. I literally laid in bed ALL day besides to get food. Food and I were not getting along yesterday either. Drinking that much was a BAD IDEA. I had been REALLY wanting to go out on the town while I was in Florida and boy did we tear it up. Mission accomplished. Besides laying around all day I went out to eat at MacAllister’s for lunch. I got cheesy broccoli soup, a club sandwich, and an iced tea. For dinner we went to a mom and pop Italian place and I got sketti and meatballs, a bruscetta appetizer (which was NOT good – blah), a TON of iced water, and a glass of chardonnay. I was hoping the chardonnay would help kick the hangover/headache/vom feeling. However, I could not even LOOK at the glass. I had a few small sips and decided that I just need to wait out this hangover and sleep it off. When we got back to the hotel I grabbed a snicker bar and coconut M&M’s (<– I know!! Who knew, right?!) and went back to my room to be horizontal for the rest of the night. Rough hangover.

I woke up today feeling SOOO much better. I did some work on the old blog (check out the About Me!) and then went to lunch. We walked to the Crab Trap on the Boardwalk. I ordered She-Crab soup (kinda like clam chowder, but with crab!) and salad. Plus, lots more H20 and a few dips in to the crab dip that my co-worker ordered. NOM. We did a little shopping on the strip and walked back to the hotel. I NEEDED to go to the gym. My body was still fighting off that nasty hangover and I knew just what to do -RUN! I surprised myself with a PR today of 5 miles in 45:34. I have been keeping up with my workouts, however, I wonder if the treadmill is right? Hm… Do you ever think on some treadmills you are "faster/slower" or your calorie count seems higher/lower? Times like these make me want to run outside with a Garmin watch so I know FOR SURE what I am getting myself into. My girl Paige has one and she LOVES it. I have not been practicing running outside which is something else I need to start doing. Spring is right around the corner (HOORAY!) which means 5K and 10K are sneaking up as well. Okay, moving on to dinner. I went down to the hotel bar intending to eat FREE bar food during Superbowl Half-time (can’t beat FREE FOOD!), but I was SOOO hungry I had to eat NOW! I ordered a cheeseburger and fries with all the fixins’.

I only ate a few fries and half of the burger NOT because I planned to, but because I was full! I am used to eating small meals/snacks about 5-7X per day and this week I have only been eating at lunch and dinner and an occasional breakfast. Which is definitely not the best plan to follow, but it is what has been working into my schedule while I am here. I think it has definitely impacted how much I eat at meals and what I choose to eat. I am on “vacay” so I intend to splurge and I am not about to beat myself up about my choices. Also, I know when I get home it’s time to kick the burgers and desert every night to the curb.

Well, it is time to start packing! 🙂 It has been a fun relaxing trip here in Florida, but I am ready to go home. Here are a few things I plan to read on the flight back. I have already been reading them a little bit here and there, but whatev. Hope you had a great Superbowl. I guess… Go Saints.


Get your fitness on!

Somebody’s got a case of the Monday’s! But, it is not this girl! 😀 This morning was the ushe as far as breakfast and work are concerned. I woke up at 5 a.m. and made and iced coffee with vanilla Almond soy milk and a T of agave and for the main course I made my favorite oatmeal combo. I have yet to drift away from this mixture -YUMMY! Work was the same ol’ same ol’. Got there at 6:30a.m. for the morning meeting and safety briefing and then did computer based training all morning. I had a trail mix Cliff bar before I hit the gym for a run at lunch. I ran 4 miles in 38:21, not too shabby!

I stretched and left work for the day. I had a dermatologist appointment scheduled, but I rescheduled so I could veg with my boo-ski and kitty and take a much-needed NAP! For lunch I had some fiber crackers with cottage cheese for an appetizer. I decided to make a tuna melt. I grilled an entire can of tuna in water on a single piece of whole wheat/high fiber 45 calorie bread and added a piece of sharp cheddar cheese. I also microwaved some leftover sour cream potatoes that Jason made over the weekend (and they were BOMB!). I ate the appetizer, potatoes, and 2 bites of my tuna melt and I was stuffed to the brim!! My eyes are bigger than my stomach, obvi. Then it was nap time. At 5:30 p.m. Jason and I headed to the World Gym. I sweat my buns off at Body Attack and Jason pumped iron! 😉 We got all cleaned up and I started packing for my trip to Florida. Jason decided to test his skills on another sushi roll and it turned out PERFECT!! It was cold and I think the riced had time to “firm up” in the refrigerator. YUMMMM! It was so good, he made 2!!

That was the appetizer. For the main course, Jason grilled BBQ chicken and green beans. The chicken was really juicy and delish!

I love when Jason cooks because he is GOOD AT IT and I know he enjoys it – usually :). I am stuffed and about ready for bed. We have to be AT WORK at 4 a.m. because I am leaving on a trip to Florida at 7:30a.m.. EARLY!! woo doggy!
