Uh oh….Uh, a little help, please?!

So, I just bought a domain (www.sunnystateofmind.com) and I have been trying to merge my @wordpress.com with my .com and I CANNOT figure it out!! I have read and watched tutorials and I just cannot figure out where I am going wrong. My .com site is up and running and this site it up and running….??? Hm… I really do not want to start over. Not that I have accomplished a lot in terms of TRUE blogging, but I have come a long way for ME and I don’t wanna start over!! 😦 Any ideas on where I may have gone wrong?

Tid Bits!

Hello, lovelies! Did last week fly by, or what!? Holy Toledo!

Wednesday night Jason and I decided to go out for a mini-celebration. I got promoted a few weeks ago to Staff Sergeant and Jason got promoted a little while ago to Technical Sergeant (he “out-ranks” me for those of you who aren’t familiar)!! YAY! πŸ™‚ We both got our paperwork in at the same time. This particular piece of paper allows us to wear our “extra” stripe! You know I was struttin’ around work showin that puppy off! πŸ˜‰

We went out for drinks at a local pub and played some friendly games of pool and darts. I actually beat Jason in 1 game of each! GO ME!! That is a HUGE deal because I NEVER win! So I had to rub it in a little and remind him when we got home. Victory was mine! πŸ™‚

Other than the pub shindig, the week buzzed by with the usual antics (namely work). Friday rolled around and we had a “HARLEY HAMMER’S HALF-DAY”! Which basically means we get to leave work at lunch (because all the work is complete, of course) and head to Hammer’s (local pub/restaurant) and have pizza/wings and beer at noonish with co-workers. It was fun and the wings were phenom!

Tid Bits from the week in no particular order…

Tuesday morning I tried a slice of the Millet bread I nabbed the other day. I smothered it in Barney Butter and went to town! OMG so goooodd. I was a little skeptical to try this bread after the EPIC FAIL gluten-free tortilla shells. But, it was FAB πŸ™‚


The bread itself has almost like a nutty flavor. I sprinkled some flaxmeal on top and sipped a side of O.J. before work. It was a good “pick me up”.

My afternoon workout was “Workout B” of my Bikini-Ready Workout (I am in phase 1 week 2 right now). It is a full body workout with 3 circuits of about 5-6 exercises each.

Tuesday night I made some ginormo salads and Jason cooked up some boneless skinless chicken breasts.

My salad was made with spinach. For fixin’s, I added tomato, yellow pepper, cucumber, mushrooms, shredded unseasoned chicken, and topped it all off with my fave honey mustard dressing! BOMB!

Breakfast has pretty much been steady with the yoush oatmeal creation and coffee. And lunch has either been a can of Healthy Choice Soup (I am loving the clam chowder and chicken and dumpling – low sodium) or a Dessert Protein Shake (Whipped Vanilla -NOM!) with a frozen banana, a heaping T of PB, a 1/3c of vanilla yogurt, T of flaxseed, and crushed ice.

Pre-workout meals have been a variety of Cliff Bars. Among the yummy flavors I tried last week were Macadamia Nut and Oatmeal Raisin Walnut! KEEPERS! πŸ™‚

Post-workout snacks have been fruit creations or a few ham & pickle roll-ups.


Banana, halved, and topped with a mound of PB and a kiwi sprinkled with cinnamon. I also finished off the coconut water. I had to put it back in the fridge the day I bought it because I tried to drink it and I just could not get in to it. So, I downed it the following day thinking I would all of a sudden think it was yummy. Nope, still not digging the coconut water. Bummer.

Thursday night’s dinner was one of my faves. HONEY MUSTARD CHICKEN!

With a side of steamed veggie medley. Mmm Mmm Mmm!

The weekend consisted of friends, cocktails, and unhealthy treats. I think pizza steals the show just about every weekend! So Good!! Friday night I consumed some delicious DeLite Thin Crust Hawaiian Pizza, compliments of Papa Murphy’s and later that night Jason picked up a House Roll from Sushi Popo. Their house sushi roll is a dream come to true! πŸ™‚ Saturday night we went to a friends house for GAME NIGHT. Jason beat me in BATTLESHIP by ONE ship!!! Dang it! Then we joined the group and played scrabble. We had a few drinks there and then ventured to Crusen’s for a chicken quesedilla, a few pitchers of beer, and a band. Good times had by all!

This week I plan to blog about planning, sports bras, gluten, and other RANDOM stuff! Hope you will join in on the discussions! I am hoping to inform and get informed.

How did the weekend treat ya? I was nursing a hangover on Sunday. I hit up the downtown bar scene on Saturday night with a girlfriend I haven’t hung out with for a while. Oh BOY… we tore it up pretty good, too. PHEW. I get hungover so easily, it stinks. BUUUUTT…Totally worth it.

For dinner Saturday night, we went to Bennigan’s. I thought the food was terrible, but ate my chicken quesediLLa anyway. No plans to go back. Then we walked to Sully’s (Irish pub). They had good drink specials and music. Then we ventured down the street to Carbon. Carbon is a dance club that plays mostly rap/hip-hop remixed into a techno song. We danced a few songs and mingled. All in all it was a fabulous evening.


It was mardi-gras weekend. Becky and I are classy gals and kept our tops on πŸ™‚ And still got beads! WOOP!

The rest of my weekend was pretty laid back and uneventful. Jason went back to Wisconsin for a “guys weekend” full of beers and ice fishing. Brrr! So Twix and I stayed at the homestead to hold down the fort.
When Jason finally got home he looked as miserable as I did. We both stayed horizontal on the couch for the rest of the night.

For lunch that day I made a simple salmon and spinach salad with yellow pepper, tomato, and honey mustard dressing.


For dinner I threw a chuck roast, carrots, mushrooms, potatoes, onion, and beef broth in a crock pot and let it sit all day. I was in no mood to cook, and I was getting no productivity out of the fiance’ either. T.K.O.!

I could not sleep that night. 😦 Between Twix hopping around everywhere, Jason snoring, my father and sister calling, my friend Tony texting, and my stomach turning into knots (PHEW!), I got 0 ZZZ’s. So, instead of being a cranky lady (or a “negative Nelly”:P) I decided to call in to work “sick”. It was wonderful. I always feel so guilty when I call in sick (even when I am really sick), but I knew it was in my best interest. I felt like a million bucks when I woke up!

I cleaned the entire apartment (including my arch nemesis- LAUNDRY! – BAH!). I nabbed a Trail Mix Cliff Bar and high tailed it to the gym for an easy 3 miler. No real rhyme or reason to this run. I mainly just wanted to clear my head, cleanse my bod (a.k.a. sweat out the toxins from weekend destruction), and just “go with the flow”. It was so relaxing. I came home and busted out some ab exercises and stretched. After I cleaned up, I made a yummy imitation crab meat and spinach salad.

I added tomato, yellow pepper, and topped with low-fat honey mustard (I’m a little addicted to this dressing right now.)

GAH! Sooo scrumptious!

And a side of kiwi sprinkled with cinnamon.

When Jason came home from work we went to H&R Block to file my taxes! πŸ™‚
All good news!

Monday night din din:

Fried porkchops in EVOO (extra virgin olive oil). Dipped in scrambled eggs and then in Italian bread crumbs prior to frying. A side of fresh steamed veggies. To include: mushrooms, yellow squash, zucchini, and broccoli- NOM!

For an appetizer, I made one home-made sushi roll.

It had cucumber, imitation crab meat, avacado, and onion & chive cream cheese. Of course, no sushi roll would be complete without light sodium soy sauce and wasabi! Mmmmmm…..

Desert was a stow away bottle of wine. Jason was on a trip (for work) in D.C. and snagged this bottle from his hotel room. Everyone loves FREE! It wasn’t the best wine ever, but it was FREE and drinkable.

Back to food! We loved the sushi combo so much, in fact, that Jason made TWO when we got home from the gym tonight! πŸ™‚ He made rolls and I made a quick run to Naturally Yours for a few items. My main reason for the trip was for some Millet Bread (gluten-free), but I ALWAYS end up buying more stuff. I am so curious I want to try it all!

Here are a few items I have acquired recently:



2 new flavors of Vegan Cookies. One is Dark Chocolate Decadence and the other is Explosive Espresso Chip! I had a Chocolate Chip, coconut, Macadamia Nut cookie for breakfast/midday snack (they are pretty big and filling so I had to eat half now and half later) and it was FAB. I still have a Cranberry Orange Muffin Cookie to try as well! I also picked up some pears and more kiwi and the Millet Bread.

I am trying to down this coconut water as I write this, but I just cannot seem to like it. It is not bad…it’s just weird. It probably takes some getting used to.

Here are a few items I bought and stuff I made a few days ago and also a few new books!


Gluten-Free Tortilla Shells = GROSS! Terrible texture and absolutely no flavor. EPIC FAIL.


Chicken Fajitas: green pepper, onion, mushrooms, salsa, pinto beans, and jalapenos. SUCCESS! minus the shells, of course.


Veggie Omelet topped with salsa and an iced coffee. Always a good choice.


This disturbing looking creation is a no-bake cookie! Chocolatey peanut buttery goodness! SUCCESS!

BOOKS:


“Big Book of Exercises” I ordered this from Women’s Health and love it! It explains all the exercises so even I can understand them. They also have a gazillion exercises in this book and different plans. I am currently doing the “Bikini Body” Plan :P. So far so good!


“The Gluten Connection” I have only read a couple pages, but it seems to be very interesting. I will discuss more about this whole gluten debacle in another blog and tell you what I thought of this book!

Sush and Euch

Howdy! This weekend has FLOWN by! Holy cow! Saturday was a great day with the boo-ski. I woke up at 7 a.m. and was ready for the gym scene! Jason…not so much. But, I talked him into it. We went to the gym from 8-10:30. I took Body Attack and Body Pump and then I was ready for anything a NAP. Jason and I put down quite a few cocktails Friday night when he got home and we were both feeling the aftermath before/during/after the gym. We were troopers, though. We put on our game faces and sucked it up at the World Gym. I had a few warm bites of my oatmeal sensation and an icee coffee prior to the sweat sesh and finished off the cold bowl of oats and another yummy icee coffee when we got home. Nom.

We lounged for about an hour and decided to go see Avatar only to discover once we got to the theater that we had looked at times for the wrong theater!! Oh no! So, we did not get to see the movie yesterday, bummer!

After getting ready for the night’s shenanigans, Jason and i drove to Bloomington to have dinner/cocktails and play EUCHRE/cocktails with Paige and Shane! πŸ™‚ We had so much fun! We ate dinner at Hyashi – Japanese Grill/ Sushi Joint. Jason and I shared a Ninja Turtle and a Philly Sushi Roll and a mixed grill of Calamari and Steak with veggies and fried rice – Delish! Ugh, we got soooo FULL! Oh, we also indulged on a couple Asahi (Japanese Beer).

Girls Vs. Boys Euchre
Boys Won. Girls should have won. ‘Nuff said. Oh Wait! Paige made some BOMB DIGGITY two-handed O.J’s!!! Love them! πŸ˜€

4th meal = 2a.m. GUMBY’S!! XL Hawaiian Pizza and an XL Pokey Stick!! I love you, Gumby’s!

Friday Night Steak and ‘Tatoes!

Hola! Time for a Friday night recap! Sorry for the choppy blogs. I have been busy lazy the past few days. Keeping up with blogging is a lot more time-consuming that I thought it’d be. I give props to the extreme bloggers who can keep up with….um, themselves?! πŸ˜› Anywho, yesterday my fiance’, Jason, got home from his trip! Hooray! Jason is in the military as well. We are both crew chiefs (aircraft mechanics) on C-130 H3 model aircraft. He was on a deployment for a week in D.C.. Twix and I missed him lots while he was away. πŸ™‚

I decided to leave work an hour early to go have lunch with Jason. If you know Jason and I, then you know where we went without me telling you. (Sadly, we can be that predictable sometimes). We went to CHILI’S!!! YUUUUUUUUUUMMM!!! We ordered bottomless chips and salsa and spinach/artichoke dip! One of my FAVES!! We also indulged on a few a bunch of cocktails throughout the day/night.

We came back to the homestead to veg and catch up.

For dinner we decided to go to the grocery store and get all the fixings for a down home steak and potato dinner!! We had home-made mashed potatoes smothered in butter and sour cream, steamed broccoli and yellow peppers, medium-rare strip steaks with sauteed onions, and more cocktails!! Jason is such a great cook. The food was DELICIOUS!

β€œFeel the Grunginess!”

Hooray for Friday!! πŸ™‚ Hope everyone has a wonderful day! I was going to blog yesterday, but when I got online to write I heard some tragic news about an acquaintance from high school. Therefore, I was not in a good state of mind to blog and I had a friend to comfort. I was not close with this person, but I have a few friends (one in particular) that were pretty close to him. I called my friend and chatted on the phone for a while. Afterward, I prayed. R.I.P. Curt Byars.

Pressing on….

Yesterday went like this:

:. Oatmeal Breakfast: I am addicted to the β€œBee’s Knees” Peanut Butter/Honey mixture. Nom nom nom!
:. Work 0630-1600
:. Lunch: Low-Fat Progresso Chicken and Dumplings soup with a few bites of a chef salad (it was not that good)
:. Home to play with the Twixster and give her meds/kitty chow
:. Chocolate protein shake with a T of low-fat peanut butter and a Β½ c coffee
:. Spin class at 1730
:. Dinner: Random Leftover’s Tacoβ€”Leftover Stuffed Pepper β€œStuffing” from Wednesday mixed with some salsa and a sprinkle (or two;)) of cheddar cheese, all wrapped in a 100 calorie whole wheat tortilla shell. So good! I was so hungry when I got back from Spin, anything would have tasted A-Mazing!

:. 20 minutes of stretching
:. Vegged the rest of the night

My spin instructor last night was a funny guy! The whole class was completely out of breath and he still had us all laughing! He was motivating and made us want to try our best and push through when we didn’t think we could β€œclimb” that third β€œhill”, which I thought was GREAT! About 30 minutes in to the class I needed all the motivation I could get. Phew! On about our third song, he played a rock song and asked that his class (of all girls and one guy) β€œfeel the grunginess!!” as he slapped his thigh, wiped the sweat from his bandanna, and BARKED like a dog before he stood up on the bike to β€œfinish the race”! Hahaha. Classy.

TGIF! I am so ready for the weekend! I am going to try to write another blog later today. Work is rather slow and boring today, so I do not think writing will be an issue… Toodles!


Hump Day!

Hello and Happy Hump Day! πŸ™‚ My Wednesday has been steadily busy. Just the way I like it. Not so slow that the day seems to drag on and not so busy I feel overwhelmed with everything I need to get done. It’s a good balance. Today I worked as usual. The morning went by slower than I had hoped, but after lunch the hours seemed to fly! If we are not too busy doing maintenance, my supervisor allows me to go the gym for one hour during work. The regulation states that work will give you one hour (if time allows) and you give up 1/2 hour of your personal time. I love food and do not normally like giving up my feasting time, so I usually go at the end of the day. Yesterday I went over lunch and i was a starvin marvin when it was all said and done. Today, however, I went at the end of the day. I took my “Wednesday’s Flat Belly” and “Belly Off Club” worksheets I printed from the Women’s Health Magazine website and was ready to tackle the gym.

Today’s workout worksheets consisted of abs and legs. After I completed my warm-up routine and worksheets I hit the treadmill for a quick 1.2 mile run at 6.5 speed. It felt great! I was contemplating a body attack (free weights/abs) class tonight at 6:45 and decided to cook dinner and clean instead.

Dinner menu: stuffed bell peppers for one!
The concoction I came up with for the “stuffing”:
~ 99% fat-free ground turkey seasoned with Lawrey’s, garlic salt, and pepper
~ black beans left over from Monday night fajitas
~ Jason’s mom’s homemade stewed tomatoes
~ chopped black olives
~ chopped onion
~ chopped mushrooms
~ 1/2 slice swiss cheese


It definitely hit the spot! And it was so easy even I didn’t screw it up! πŸ™‚ I am not a very good cook, but I am learning. My fiance’ is a great cook. He has taught me a lot and he is always willing to let me experiment in the kitchen. Also, I have read a TON of health blogs for food, health, and blogging tips. So I get some recipe/cooking tips there as well. I need all the help I can get in the cooking department!! So far I have not bombed any meals. *Knock on wood*.

The rest of my night consisted of cleaning, laundry, and hanging with Twix. She is still in lazy kitty recovery mode and doing great! πŸ™‚ I do not necessarily enjoy cleaning, but I LOVE when the homestead is clean. The smell, the scenery, and how much better I feel when the house is clean makes my day a little better. It’s so nice relaxing. So relaxing, in fact, that I thought I would enjoy the scenery with a little cocktail. My choice for the night was a vodka and orange juice. YUM!!

Time to relax with my drink and watch the new episode of TOSH.0! His show is HI-LARIOUS! πŸ˜€ He is on Comedy Central. The new season just started and he has new episodes every Wednesday. CHECK IT OUT!


Second Time’s A Charm?

Hello blog world! My name is Kimberly, welcome! πŸ™‚
Today has been a very productive day. I woke up at 5 a.m. and went to the World Gym for a (much needed) spin class. I say much needed because I splurged on food and cocktails over the weekend with friends and family. I enjoyed myself and had a great time with everyone, but my body is definitely feeling the aftershock today. I felt the urge to rid my body of all the toxins from the weekend with a good old fashioned sweat session! After the class I did some stretching and 45 minutes of free weights. I printed out an 8 week workout plan from the Women’s Health Magazine website. I really enjoy that site, it is addicting. Yes, I said it…I’m addicted to (DUN DUN DUN!!) KNOWLEDGE!!! I have not been following it to a T, but over the past 3 weeks I have used their routines 4 out of the 5-6 days I workout! They are easy to understand, not difficult, and best of all THEY WORK!! After doing their ab routine ONE DAY I could not laugh or sit up without feeling the awesome effects that routine had on my abs!

When I got home from the gym I felt like I was withering away I was so hungry! I decided to make some oatmeal and doctor it up with some yummy toppings a girlfriend of mine uses and loves!

The oatmeal included:
*1/2 cup Quaker Oats
*1 cup vanilla soy milk
*1 tablespoon ground flax seed
*1 tablespoon agave
*1 (ish) tablespoon of Bees Knees – deeeeellliissshhh!! this made the oatmeal
*1 small handful of raisins
and a glass of iced coffee with a tablespoon of agave and 1/4 cup of vanilla soy milk.


I was surprisingly impressed with both the oatmeal and the iced coffee treat! I usually love my coffee HOT. However, I was stressed for time and read on other blogs that this was yummy. I give it two thumbs up! πŸ™‚

I have been reading health blogs over the past few months and I love all the blogger’s TIPS, RECIPES, AND WORKOUTS! What I love most about reading all the health blogs is the MOTIVATION AND INSPIRATION they give me to (at least attempt to) live a healthier lifestyle!

I am trying to pick up where I left off on this blog yesterday (A.D.D. ;)) so forgive me if this gets a little choppy. Here is a quick overview of yesterday’s agenda after breakfast:

> Took Twix (my kitty) to the vet to get declawed and spaed
> Naturally Yours grocery store for a few quick items
> Laundry- for (what felt like) an eternity
> Made Chicken Fajitas for dinner – and they were FAB!! If I do say so myself.
