Uh oh….Uh, a little help, please?!

So, I just bought a domain (www.sunnystateofmind.com) and I have been trying to merge my @wordpress.com with my .com and I CANNOT figure it out!! I have read and watched tutorials and I just cannot figure out where I am going wrong. My .com site is up and running and this site it up and running….??? Hm… I really do not want to start over. Not that I have accomplished a lot in terms of TRUE blogging, but I have come a long way for ME and I don’t wanna start over!! 😦 Any ideas on where I may have gone wrong?

Tid Bits!

Hello, lovelies! Did last week fly by, or what!? Holy Toledo!

Wednesday night Jason and I decided to go out for a mini-celebration. I got promoted a few weeks ago to Staff Sergeant and Jason got promoted a little while ago to Technical Sergeant (he “out-ranks” me for those of you who aren’t familiar)!! YAY! 🙂 We both got our paperwork in at the same time. This particular piece of paper allows us to wear our “extra” stripe! You know I was struttin’ around work showin that puppy off! 😉

We went out for drinks at a local pub and played some friendly games of pool and darts. I actually beat Jason in 1 game of each! GO ME!! That is a HUGE deal because I NEVER win! So I had to rub it in a little and remind him when we got home. Victory was mine! 🙂

Other than the pub shindig, the week buzzed by with the usual antics (namely work). Friday rolled around and we had a “HARLEY HAMMER’S HALF-DAY”! Which basically means we get to leave work at lunch (because all the work is complete, of course) and head to Hammer’s (local pub/restaurant) and have pizza/wings and beer at noonish with co-workers. It was fun and the wings were phenom!

Tid Bits from the week in no particular order…

Tuesday morning I tried a slice of the Millet bread I nabbed the other day. I smothered it in Barney Butter and went to town! OMG so goooodd. I was a little skeptical to try this bread after the EPIC FAIL gluten-free tortilla shells. But, it was FAB 🙂


The bread itself has almost like a nutty flavor. I sprinkled some flaxmeal on top and sipped a side of O.J. before work. It was a good “pick me up”.

My afternoon workout was “Workout B” of my Bikini-Ready Workout (I am in phase 1 week 2 right now). It is a full body workout with 3 circuits of about 5-6 exercises each.

Tuesday night I made some ginormo salads and Jason cooked up some boneless skinless chicken breasts.

My salad was made with spinach. For fixin’s, I added tomato, yellow pepper, cucumber, mushrooms, shredded unseasoned chicken, and topped it all off with my fave honey mustard dressing! BOMB!

Breakfast has pretty much been steady with the yoush oatmeal creation and coffee. And lunch has either been a can of Healthy Choice Soup (I am loving the clam chowder and chicken and dumpling – low sodium) or a Dessert Protein Shake (Whipped Vanilla -NOM!) with a frozen banana, a heaping T of PB, a 1/3c of vanilla yogurt, T of flaxseed, and crushed ice.

Pre-workout meals have been a variety of Cliff Bars. Among the yummy flavors I tried last week were Macadamia Nut and Oatmeal Raisin Walnut! KEEPERS! 🙂

Post-workout snacks have been fruit creations or a few ham & pickle roll-ups.


Banana, halved, and topped with a mound of PB and a kiwi sprinkled with cinnamon. I also finished off the coconut water. I had to put it back in the fridge the day I bought it because I tried to drink it and I just could not get in to it. So, I downed it the following day thinking I would all of a sudden think it was yummy. Nope, still not digging the coconut water. Bummer.

Thursday night’s dinner was one of my faves. HONEY MUSTARD CHICKEN!

With a side of steamed veggie medley. Mmm Mmm Mmm!

The weekend consisted of friends, cocktails, and unhealthy treats. I think pizza steals the show just about every weekend! So Good!! Friday night I consumed some delicious DeLite Thin Crust Hawaiian Pizza, compliments of Papa Murphy’s and later that night Jason picked up a House Roll from Sushi Popo. Their house sushi roll is a dream come to true! 🙂 Saturday night we went to a friends house for GAME NIGHT. Jason beat me in BATTLESHIP by ONE ship!!! Dang it! Then we joined the group and played scrabble. We had a few drinks there and then ventured to Crusen’s for a chicken quesedilla, a few pitchers of beer, and a band. Good times had by all!

This week I plan to blog about planning, sports bras, gluten, and other RANDOM stuff! Hope you will join in on the discussions! I am hoping to inform and get informed.

How did the weekend treat ya? I was nursing a hangover on Sunday. I hit up the downtown bar scene on Saturday night with a girlfriend I haven’t hung out with for a while. Oh BOY… we tore it up pretty good, too. PHEW. I get hungover so easily, it stinks. BUUUUTT…Totally worth it.

For dinner Saturday night, we went to Bennigan’s. I thought the food was terrible, but ate my chicken quesediLLa anyway. No plans to go back. Then we walked to Sully’s (Irish pub). They had good drink specials and music. Then we ventured down the street to Carbon. Carbon is a dance club that plays mostly rap/hip-hop remixed into a techno song. We danced a few songs and mingled. All in all it was a fabulous evening.


It was mardi-gras weekend. Becky and I are classy gals and kept our tops on 🙂 And still got beads! WOOP!

The rest of my weekend was pretty laid back and uneventful. Jason went back to Wisconsin for a “guys weekend” full of beers and ice fishing. Brrr! So Twix and I stayed at the homestead to hold down the fort.
When Jason finally got home he looked as miserable as I did. We both stayed horizontal on the couch for the rest of the night.

For lunch that day I made a simple salmon and spinach salad with yellow pepper, tomato, and honey mustard dressing.


For dinner I threw a chuck roast, carrots, mushrooms, potatoes, onion, and beef broth in a crock pot and let it sit all day. I was in no mood to cook, and I was getting no productivity out of the fiance’ either. T.K.O.!

I could not sleep that night. 😦 Between Twix hopping around everywhere, Jason snoring, my father and sister calling, my friend Tony texting, and my stomach turning into knots (PHEW!), I got 0 ZZZ’s. So, instead of being a cranky lady (or a “negative Nelly”:P) I decided to call in to work “sick”. It was wonderful. I always feel so guilty when I call in sick (even when I am really sick), but I knew it was in my best interest. I felt like a million bucks when I woke up!

I cleaned the entire apartment (including my arch nemesis- LAUNDRY! – BAH!). I nabbed a Trail Mix Cliff Bar and high tailed it to the gym for an easy 3 miler. No real rhyme or reason to this run. I mainly just wanted to clear my head, cleanse my bod (a.k.a. sweat out the toxins from weekend destruction), and just “go with the flow”. It was so relaxing. I came home and busted out some ab exercises and stretched. After I cleaned up, I made a yummy imitation crab meat and spinach salad.

I added tomato, yellow pepper, and topped with low-fat honey mustard (I’m a little addicted to this dressing right now.)

GAH! Sooo scrumptious!

And a side of kiwi sprinkled with cinnamon.

When Jason came home from work we went to H&R Block to file my taxes! 🙂
All good news!

Monday night din din:

Fried porkchops in EVOO (extra virgin olive oil). Dipped in scrambled eggs and then in Italian bread crumbs prior to frying. A side of fresh steamed veggies. To include: mushrooms, yellow squash, zucchini, and broccoli- NOM!

For an appetizer, I made one home-made sushi roll.

It had cucumber, imitation crab meat, avacado, and onion & chive cream cheese. Of course, no sushi roll would be complete without light sodium soy sauce and wasabi! Mmmmmm…..

Desert was a stow away bottle of wine. Jason was on a trip (for work) in D.C. and snagged this bottle from his hotel room. Everyone loves FREE! It wasn’t the best wine ever, but it was FREE and drinkable.

Back to food! We loved the sushi combo so much, in fact, that Jason made TWO when we got home from the gym tonight! 🙂 He made rolls and I made a quick run to Naturally Yours for a few items. My main reason for the trip was for some Millet Bread (gluten-free), but I ALWAYS end up buying more stuff. I am so curious I want to try it all!

Here are a few items I have acquired recently:



2 new flavors of Vegan Cookies. One is Dark Chocolate Decadence and the other is Explosive Espresso Chip! I had a Chocolate Chip, coconut, Macadamia Nut cookie for breakfast/midday snack (they are pretty big and filling so I had to eat half now and half later) and it was FAB. I still have a Cranberry Orange Muffin Cookie to try as well! I also picked up some pears and more kiwi and the Millet Bread.

I am trying to down this coconut water as I write this, but I just cannot seem to like it. It is not bad…it’s just weird. It probably takes some getting used to.

Here are a few items I bought and stuff I made a few days ago and also a few new books!


Gluten-Free Tortilla Shells = GROSS! Terrible texture and absolutely no flavor. EPIC FAIL.


Chicken Fajitas: green pepper, onion, mushrooms, salsa, pinto beans, and jalapenos. SUCCESS! minus the shells, of course.


Veggie Omelet topped with salsa and an iced coffee. Always a good choice.


This disturbing looking creation is a no-bake cookie! Chocolatey peanut buttery goodness! SUCCESS!

BOOKS:


“Big Book of Exercises” I ordered this from Women’s Health and love it! It explains all the exercises so even I can understand them. They also have a gazillion exercises in this book and different plans. I am currently doing the “Bikini Body” Plan :P. So far so good!


“The Gluten Connection” I have only read a couple pages, but it seems to be very interesting. I will discuss more about this whole gluten debacle in another blog and tell you what I thought of this book!

Keeping up with the Kolesar

Hello lovely bloggy friends! 🙂 Sorry I have been incognito lately. I have been a little busy since my trip to Florida and definitely not motivated to blog or be on a computer for very long for that matter. Here is what I have been up to:

Went to CHEESEHEAD LAND with the fiance’ from this past Friday until this Tuesday. We had a really great time (per the yoush – a.k.a usual, if you are new to the lingo). The 13th was our ONE YEAR ANNIVERSARY!! :):) Jason is the love of my life. He makes me so happy. You are probably thinking, “Gee, Kim, what did you guys do for your anniversary/v-day?!” Well, let me just tell you all about it! We did….NOTHING (in particular). For our anniversary we hung out with his cousin (Brian) and his wife (Lori) and had a few drinks and some food. Valentine’s day we went to see “When In Rome”. BTW do not go to the theater to see this movie. It is definitely a RENTABLE FILM. I give it 1/2 a thumb up ;). Let me back up to Friday real quick. Jason, myself, Brian, and Lori all stayed in a hotel connected to a casino in Dubuque, Iowa for a night. Contrary to popular belief, ZERO gambling took place that evening. It commenced Saturday morning 😉 Friday night we hit the town. We went downtown to the local bar scene and also hit up a decent Italian restaurant. I have to admit I was doing some hungover gambling Saturday mornin’. UGH. I tested the gambling waters with a solid $50, lost it in 10 minutes, and left the table. BOOOO! Hopefully my luck improves when we get to Vegas!! More on that in a minute…

On Sunday night, Jason and I went back to his rented house in Wisco and he built a fire. We made s’mores and snuggled up…:) It was WONDERFUL.

I also got a few things accomplished while I was in WISCO:
1. Wisconsin License Plates
2. Wisconsin Driver’s License
EEEKKKKK! It is all coming together so nicely. I have to give Jason credit for being so organized with EVERYTHING. He is making everything so easy for me. Making sure I have all the paperwork in order and filled out, all proper documentation, ETC. Basically, he helps me be prepared and not overwhelmed by anything (moving-wise) and he is helping make my transition easy and smooth. I am very thankful.

We also saw lots of Jason’s family on our extended stay. It was nice to see everyone and to finally give them a chance to take a peek at the engagement ring! 🙂

Okay back to the news about VEGAS!! Jason and I decided to celebrate our one year anniversary/Valentine’s Day/my 25th birthday/his 27th birthday in VEGAS!! The stipulations: no gifts for any of these days PERIOD. All money goes towards a kick ass time and a special date in SIN CITY. 🙂 We are going the first weekend in April. We went last year around May 10th and had an A-MAZING time. We also “broke-even” for our trip on gambling. Keeping my fingers crossed…

SUCCESSES!! I have been reading on other blogs about this CHIA seed so I had to try it. Also, the Barney Butter is so good!! The Almond butter I bought prior always had so much oil on top and was a mess to stir, but Barney’s is yummy and easy! 2 thumbs up! Looking forward to these MONDO cookies as well…

Okay, on to an EPIC KALE FAIL:

Woops. Burnt the crap outta this batch! They were NASTY. Especially for a first timer. Made a second batch the next day and it was a SUCCESS!! Sprinkled with some sea salt and enjoyed. 🙂

This morning:




Woke up to some YOGA, warm morning JOE, home-made BREAKFAST COOKIE (thanks to FITNESSISTA –I am not sure how to tag or “link” people to their “creations”, but I do want to give credit where credit is due until I figure this whole blogging thing out!), and a crunchy peanut butter LARA BAR for the road. 🙂 NOMNOMNOM!!

Well, it is late and I need Zzz’s. a.k.a beauty sleep. Hope you had a great week as well. 🙂 Night!


I DID IT!

Hola! Is anyone else ready for the weekend?! I am. I know I just got back from Florida, but I am so not ready for “work mode” yet, UGH. I am still in Florida mode and work is NOT in my FL schedule 😉 Monday I got home at 2ish and worked until 4 and came home and hung out with Jason and Twix. Yesterday I worked until 4 and studied throughout the day for my Staff Sergeant Board. No news to tell of Monday and Tuesday really. Except for the fact that I was so ready to get back into somewhat of a routine. One week away from home and I was thrown out of my “norm” -freely and loving it, of course. So Tuesday morning I woke up and made my yummy mix of oatmeal plus an individual size Benefiber (tasteless!) and an icy coffee!


I was CRAVING this meal! I tried to duplicate it once in FL, but *sigh*, no Bees Knees or Almond milk in sight. Bummer. There is a woman at work who is retiring and the Maintenance Squadron held a Pot Luck for her with all kinds of YUMMY food! I was a good girl and, knowing how much I splurged (and loved every minute!) in FL, I decided to nab some carrots, celery, broccoli, and cauliflower with about a TBLS of low-cal ranch for dipping. For the main course I had a heaping bowl of HOTTTT chili with some oyster crackers and I shared a home-made oatmeal chocolate chip bar with Jason – sooo goooood! 🙂 (by share I mean I gave Jason UNO bitO)

I hit a PR yesterday!!! I ran 6(.3) MILES in 60:06!!! I was not too concerned with timing. I was more focused on hitting that 6 mile mark and I DID IT!!!! I wanted to see how I felt and if I could even run, a 10K (on the treadmill). This is officially the farthest I have EVER run! I have used a treadmill for all of my runs thus far, however, I do intend to hit the open road a few times here soon. Also, my fiance’ told me today that they hold 5K and 10K (ETC) races in Afghanistan!! So I am looking forward to getting my run on in the desert. 🙂 Stay tuned in April-July time frame for updates!

I have really been wanting to try TOFU so last night Jason agreed to try it with me. Jason cooked dinner while I studied. He did such a great job with the tofu. He seasoned it with a Blazin’ Cajun Rub we got at a festival over the summer, A1 sauce, Worcestershire, Lowery’s, Garlic Salt, and S&P. Then he cooked the tofu in extra virgin olive oil. The outside of the tofu was crispy and the inside was tender and smooshey. It had a weird texture in the middle like…a….a soggy french toast! But the flavor was delish so I got over the texture fast. On the side was a California Medley of broccoli, carrots, zucchini, squash, and cauliflower (seasoned) and some chicken broccoli rice. Turned out FAB!

I give TOFU two thumbs up! I will definitely eat this again.

On to TODAY: WEDNESDAY

Jason and I had to be AT WORK at 3:30 A.M. I woke up at 2 (WOAH BABY!) and had my usual oatmeal and I had a cup of hot coffeeJOE because it was FREEZING up in this mother! Brrrr! I worked all morning and studied in between because my BOARD was today!!! I am pleased to announce that I GOT PROMOTED!! :):) You can now refer to me as “Staff Sergeant Kolesar” – EEEKK!! I have waited 4 years to get out of the “Airman” range. I DID IT!!! I was super nervous all month about this promotion. I mean, I know I deserve it and I work my buns off, so the evidence is all there. I just hate interviews and being in a room with (3) superiors with lots of questions about ME and MY opinion. Talk about some anxiety building up -PHEW! But, I made it through and surprised myself! I hate when I have self-doubt about things that I know I am damn well capable of doing – Grrr, it’s frustrating. I chalk it up to a fear of FAILURE. Then I suck it up and do what I know I can do and kick that fear to the curb!! 🙂 Movin’ on up! Woop Woop!

Now it’s time for din din and a celebratory cocktail (or 2 ;)). Here is a sneak peek at dinner:

Jason made porkchops dipped in egg (scrambled) and Italian bread crumbs and fried in 1.5 TBLSP EVOO (extra virgin olive oil) and a green bean casserole with 2 cans green beans, 1 can cream of mushroom soup (low sodium), and crumbled saltines on top and baked! Looks good! I am so glad Jason can cook 🙂 Top this meal off with some vodka OJ (screwdriver) and it’s a wrap!

Homeward Bound….I think.

Happy Superbowl Sunday!! Are you watching the game or are you like me and only paying attention to the commercials? 🙂 Yeah, I do not follow football. I have tried to understand the sport a few times, but I just cannot get into it enough to pay attention for very long. My fiance’ and most of my guy friends love it. I do not mind watching football with him or friends as long as there is good food and booze present as well. Otherwise, count me out. Oh by the way, I am still in Florida. We were supposed to go home on Friday but Illinois got some bad weather and we were told that we weren’t coming home until tomorrow! So, we have just been kicking it and wasting time. I don’t mind though. I am glad that we are (hopefully) going to be home tomorrow because I have things I would like to get accomplished (at work and at home) and I miss my Boo and my cat. Living out of a suitcase is just not my thing. So I met some co-workers down at the hotel bar and it was bumpin’ with football fans (and commercial watchers!!) We ordered some grub and I came back to my room so I do not get sucked into the vortex that IS Superbowl Sunday. I need to pack and relax before we peace out tomorrow morning – EARLY! I have been slacking the past couple days on blogging, so let me catch you up on what’s been happenin’! 🙂

Friday we made a trip to the Wal-Mart – yes, we were that BORED. We also went to Mexican restaurant in Destin and it was yummy! I ordered chips and salsa and a side of white cheese and a chicken fajita with all the fixins’.

I think the rest of Friday I just hungout around the hotel. All my days are beginning to run together! Bah, don’t you just hate when that happens?! This is why blogging everyday is ideal, because if you wait too long it is hard to decipher what you did on what days! Anyway, I made a friend while I was here! Her name is Danielle and she is a bartender at the hotel lounge. She took me out on the town and we had a blast! I had quite a few cocktails and made one too many drunk dials to the Booski – oops! Also, I devoured a few slices of pizza in the early hours of the A.M.. Danielle was a good wing(wo)man though. She kept me at her side and made sure I made it home safely. 🙂 And HOLY HANGOVER yesterday!! Oh goodness! I felt AWFUL. Ugh. I literally laid in bed ALL day besides to get food. Food and I were not getting along yesterday either. Drinking that much was a BAD IDEA. I had been REALLY wanting to go out on the town while I was in Florida and boy did we tear it up. Mission accomplished. Besides laying around all day I went out to eat at MacAllister’s for lunch. I got cheesy broccoli soup, a club sandwich, and an iced tea. For dinner we went to a mom and pop Italian place and I got sketti and meatballs, a bruscetta appetizer (which was NOT good – blah), a TON of iced water, and a glass of chardonnay. I was hoping the chardonnay would help kick the hangover/headache/vom feeling. However, I could not even LOOK at the glass. I had a few small sips and decided that I just need to wait out this hangover and sleep it off. When we got back to the hotel I grabbed a snicker bar and coconut M&M’s (<– I know!! Who knew, right?!) and went back to my room to be horizontal for the rest of the night. Rough hangover.

I woke up today feeling SOOO much better. I did some work on the old blog (check out the About Me!) and then went to lunch. We walked to the Crab Trap on the Boardwalk. I ordered She-Crab soup (kinda like clam chowder, but with crab!) and salad. Plus, lots more H20 and a few dips in to the crab dip that my co-worker ordered. NOM. We did a little shopping on the strip and walked back to the hotel. I NEEDED to go to the gym. My body was still fighting off that nasty hangover and I knew just what to do -RUN! I surprised myself with a PR today of 5 miles in 45:34. I have been keeping up with my workouts, however, I wonder if the treadmill is right? Hm… Do you ever think on some treadmills you are "faster/slower" or your calorie count seems higher/lower? Times like these make me want to run outside with a Garmin watch so I know FOR SURE what I am getting myself into. My girl Paige has one and she LOVES it. I have not been practicing running outside which is something else I need to start doing. Spring is right around the corner (HOORAY!) which means 5K and 10K are sneaking up as well. Okay, moving on to dinner. I went down to the hotel bar intending to eat FREE bar food during Superbowl Half-time (can’t beat FREE FOOD!), but I was SOOO hungry I had to eat NOW! I ordered a cheeseburger and fries with all the fixins’.

I only ate a few fries and half of the burger NOT because I planned to, but because I was full! I am used to eating small meals/snacks about 5-7X per day and this week I have only been eating at lunch and dinner and an occasional breakfast. Which is definitely not the best plan to follow, but it is what has been working into my schedule while I am here. I think it has definitely impacted how much I eat at meals and what I choose to eat. I am on “vacay” so I intend to splurge and I am not about to beat myself up about my choices. Also, I know when I get home it’s time to kick the burgers and desert every night to the curb.

Well, it is time to start packing! 🙂 It has been a fun relaxing trip here in Florida, but I am ready to go home. Here are a few things I plan to read on the flight back. I have already been reading them a little bit here and there, but whatev. Hope you had a great Superbowl. I guess… Go Saints.


Sunshine and Mai' Tais!

What’s better than sun and 70 degree weather in the middle of winter??? NOTHING!! 🙂 Ahhh, I am loving it here in the sunshine state. I heard it snowed in IllinoiSSS yesterday – Bahahaha — suckers!!! I am going to make this as short and sweet as possible. It is time for a……RECAPPPP!!! **dun dun dun** 😛

Here is what I have been up to the past 2.5 days in Florida:

I am here for work, but have done VERY LITTLE. I’m not complainin’! Monday was a veg day. We flew over on one of our C-130’s and arrived in Florida at 11ish in the A.M.. We checked in to our hotel (which has 2 heated pools and a hot tub and the beach is the backyard- EEEKK!) So, once we got all settled in at the hotel we decided to go get our grub on. We got a few tips on restaurants from some co-workers that were recently here for work as well. One of the places that was suggested was McGuire’s Irish Pub.


The ENTIRE inside of the pub was SMOTHERED in dollar bills!! And there were a few signed bras strewn throughout the place – random. There were literally ZERO bare spots on the wall, even the ceiling fans had $$$ on them- DANG!

Here was lunch:

Chicken breast with swiss cheese, sauteed mushrooms, green peppers, and onion and a side of asapargus. Meh, not impressed.

Next stop — BASKIN ROBINS! All of our sweet tooth’s must have been in sync because we were all CRAVING ice cream! NOM!

Of alllllll the flavors, I chose….. a single scoop of COOKIES N’ CREAM! 🙂 I had a hard time making a decision because they all looked so scrumptious, so I decided to stick to a tried and true flavor! I was happy with my executive decision.:) On the way home we stopped at a mini mart so I could grab a few items.


A few healthy treats and a big girl treat. My fave wine is Chardonnay. This wine was no Yellow Tail, but it was drinkable. I had one decent sized glass in a classy foam hotel cup that night and I woke up with a headache — not a good sign.

I hung in for the rest of the afternoon until dinner. Mainly just facebook browsing stalking and watching the boob tube. For dinner, we decided to try another suggested restaurant.

I was stuffed to the gills and ready to be horizontal for the rest of the night. Good Monday.

On to Tuesday…
Had to work for the majority of the morning. (BBBBOOOOOOO!) After work we went to the O.G. (Olive Garden, for those of you who are unfamiliar with the lingo) for some bottomless SSB (soup, salad, breadsticks, DUH!)! It was DELISH, as usual. We came back to the hotel and took a walk on the beach.

As you can see, the sand is really white and it felt like baking flour when you walked in it. It is so soothing in “my backyard“. 🙂

After the refreshing walk, I decided to scope out the gym scene at the hotel. The gym was small but it had a treadmill so I was content. I ran 3 miles in 27:50!! Go ME!! I came back to my room to finish my workout (which was mostly legs and some abs) and slug some H20.
That workout made me all sweaty GLOW 😉

I worked hard now I want a REWARD, damn it!! 😛 MAI’ TAI! MAI’ TAI!!! CHA CHA CHACHAHCHA!!!

Oh, that hit the spot, FO SHO! Add some happy hour bar food and I was ready for….DINNER! Don’t judge me. 😉

For dinner, we went to Pandora’s Steakhouse. I had a petite filet minon, twice baked potato, and dinner salad with ranch dressing. The steak was cooked to perfection at a warm medium rare.


I am drooling just remembering how awesome it was last night.

No desert last night. Oh, wait! I did have another Mai’ Tai and brought it back to my room. Heh Heh. The rest of the night I vegged. Go figure. Hey, I am on vacay. I can be lazy if I wanna! I did try contacting a girl (loadmaster) that was stationed at the Peoria Air Guard with me for a few years and transferred here to Florida over a year ago. However, she secret facebook messaged me that she is over in Iraq and will not be home until June. Bummer. I’ll have to catch up with her via mail and a possible visit some other time.

Today has been an easy breezy day. Not too much to tell thus far. Went into work for a few hours and out to lunch at a pizza joint. I shared a veggie pizza and a combo deep-fried goody appetizer with my co-workers. It wasn’t the best food, but it eased my growling belly. The rest of my day consists of….NOTHING!:) Well, packing and dinner (possibly another Mai’ Tai). Otherwise, just kicking it! 🙂

Sunshine and Mai’ Tais!

What’s better than sun and 70 degree weather in the middle of winter??? NOTHING!! 🙂 Ahhh, I am loving it here in the sunshine state. I heard it snowed in IllinoiSSS yesterday – Bahahaha — suckers!!! I am going to make this as short and sweet as possible. It is time for a……RECAPPPP!!! **dun dun dun** 😛

Here is what I have been up to the past 2.5 days in Florida:

I am here for work, but have done VERY LITTLE. I’m not complainin’! Monday was a veg day. We flew over on one of our C-130’s and arrived in Florida at 11ish in the A.M.. We checked in to our hotel (which has 2 heated pools and a hot tub and the beach is the backyard- EEEKK!) So, once we got all settled in at the hotel we decided to go get our grub on. We got a few tips on restaurants from some co-workers that were recently here for work as well. One of the places that was suggested was McGuire’s Irish Pub.


The ENTIRE inside of the pub was SMOTHERED in dollar bills!! And there were a few signed bras strewn throughout the place – random. There were literally ZERO bare spots on the wall, even the ceiling fans had $$$ on them- DANG!

Here was lunch:

Spinach dip – Phenom!!!

Look at the size of that chip!! They were ENORMO!!!

Chicken breast with swiss cheese, sauteed mushrooms, green peppers, and onion and a side of asapargus. Meh, not impressed.

Next stop — BASKIN ROBINS! All of our sweet tooth’s must have been in sync because we were all CRAVING ice cream! NOM!

Of alllllll the flavors, I chose….. a single scoop of COOKIES N’ CREAM! 🙂 I had a hard time making a decision because they all looked so scrumptious, so I decided to stick to a tried and true flavor! I was happy with my executive decision.:) On the way home we stopped at a mini mart so I could grab a few items.

Get your fitness on!

Somebody’s got a case of the Monday’s! But, it is not this girl! 😀 This morning was the ushe as far as breakfast and work are concerned. I woke up at 5 a.m. and made and iced coffee with vanilla Almond soy milk and a T of agave and for the main course I made my favorite oatmeal combo. I have yet to drift away from this mixture -YUMMY! Work was the same ol’ same ol’. Got there at 6:30a.m. for the morning meeting and safety briefing and then did computer based training all morning. I had a trail mix Cliff bar before I hit the gym for a run at lunch. I ran 4 miles in 38:21, not too shabby!

I stretched and left work for the day. I had a dermatologist appointment scheduled, but I rescheduled so I could veg with my boo-ski and kitty and take a much-needed NAP! For lunch I had some fiber crackers with cottage cheese for an appetizer. I decided to make a tuna melt. I grilled an entire can of tuna in water on a single piece of whole wheat/high fiber 45 calorie bread and added a piece of sharp cheddar cheese. I also microwaved some leftover sour cream potatoes that Jason made over the weekend (and they were BOMB!). I ate the appetizer, potatoes, and 2 bites of my tuna melt and I was stuffed to the brim!! My eyes are bigger than my stomach, obvi. Then it was nap time. At 5:30 p.m. Jason and I headed to the World Gym. I sweat my buns off at Body Attack and Jason pumped iron! 😉 We got all cleaned up and I started packing for my trip to Florida. Jason decided to test his skills on another sushi roll and it turned out PERFECT!! It was cold and I think the riced had time to “firm up” in the refrigerator. YUMMMM! It was so good, he made 2!!

That was the appetizer. For the main course, Jason grilled BBQ chicken and green beans. The chicken was really juicy and delish!

I love when Jason cooks because he is GOOD AT IT and I know he enjoys it – usually :). I am stuffed and about ready for bed. We have to be AT WORK at 4 a.m. because I am leaving on a trip to Florida at 7:30a.m.. EARLY!! woo doggy!
